The machine freezes the food, lowers the chamber pressure and removes frozen moisture as vapour. When the cycle is complete, the dry food is ready for suitable airtight packaging.

Four stages managed by the machine
The controls coordinate freezing, vacuum drying, vapour capture and the final drying stage before the food is ready to package.
Freeze
The batch is frozen so moisture can later be removed from the frozen state.
Vacuum
A vacuum environment supports moisture removal during the drying cycle.
Vapor capture
Released water vapor is collected on the cold condenser instead of returning to the food.
Final dry
A controlled final stage removes remaining moisture before the finished food is packed.
